Truffle Award

A chocolate truffle is an emulsion of chocolate, cream, and other flavorings (known as ganache) traditionally rolled in cocoa powder, but sometimes coated in coconut, chopped nuts, or more chocolate.  The classic French truffle dusts the ganache in cocoa powder, resembling the black truffles famously hunted each summer in the French countryside – the dessert’s namesake.

Our most heavily weighted metric. Each truffle is evaluated on fullness of flavor and how harmoniously the shell and filling flavors compliment each other.

Execution

Each truffle is evaluated on texture, tempering, and molding, with marks against any uneven tempering or molding, air gaps between the shell and filling, or broken emulsions.

Formulation

Each truffle is judged on the balance of its components and use of fresh, high quality ingredients.

Interpretation

Our judges evaluate each truffle on the originality, visual beauty, and textural concept.
