The Golden Truffle Award

Winning Criteria

Taste

Our most heavily weighted metric. Each truffle, bonbon, or other chocolate candy is evaluated on fullness of flavor and how harmoniously the shell and filling flavors compliment each other.

Execution

Each truffle is evaluated on texture, tempering, and molding, with marks against any uneven tempering or molding, air gaps between the shell and filling, or broken emulsions.

Formulation

Each entry is judged on the balance of its components and use of fresh, high quality ingredients.

Appearance

Each entry is evaluated on both its packaged and unpackaged appearance to determine if the bar compels tasting.
